- 4 Trifecta Beyond Meat burgers or 16 ounces Beyond Meat
- 1 teaspoon avocado oil
- 1/2 yellow onion, small diced
- 2 stalks celery, finely chopped
- 2 carrots, small diced
- 3 cloves garlic, minced
- 1/2 cup roasted red peppers, drained from jar and diced
- 1 (15 oz) can roasted diced tomatoes
- 2 tablespoons chili powder
- 1 tablespoon chipotle powder
- 3 tablespoons smoked paprika
- 2 tablespoons onion powder
- 1/2 teaspoon nutmeg
- 1 can kidney beans, drained and rinsed
- 2 cups vegetable stock
- 4 tablespoons orange juice or apple cider vinegar
- 1 tablespoon maple syrup
INSTRUCTIONS
