Ice cream used to be one of my favourite treats as a kid. My parents used to take my brother and I to Dairy Queen at least once every couple of weeks for a blizzard or a dipped cone.

Sometimes we got REALLY lucky and they’d take us to Mable Slab, or other local ice cream shops in town for a treat. I ALWAYS got birthday cake flavoured ice cream when I got the chance. Like 10/10 times. It has always been my favourite and will always remain my favourite!

However in the last 4-5 years ice cream has never agreed with my stomach. I’m definitely not lactose intolerant, but anytime ice cream was involved I felt like I was. I sometimes would have IBS flares for days after eating ice cream.

My body was screaming for me to stop eating the dang thing, so I finally decided to listen and come up with a vegan version of my favourite ice cream!

HOW TO MAKE

  1. Chill bowl inside ice cream maker in freezer for 24 hours.
  2. Pre-mix ingredients (excluding sprinkles) in a medium bowl with a whisk and add to refrigerator so everything is ready to go.
  3. After 24 hours of chilling your bowl, pour mixture into ice cream maker and churn for 25 minutes.
  4. After 25 minutes, add sprinkles and continue churning for 1 minute.
  5. Serve and eat immediately. If you prefer “harder” ice cream, rather than soft serve, transfer to a freezer safe container to freeze for 3-4 hours. Store remaining ice cream in the freezer!
